All tomatoes are slightly acidic, with the more flavorful ones tending to have a lower PH level than others, red tomatoes tend to be more acidic. Varying levels of sugar content will make a tomato taste either sweet or tart, the larger yellow varieties having the highest sugar content and being the sweetest.
